We've eaten at hundreds of Michelin Star restaurants around the world. But it's the woman in her 80s bagging up Naem Khao Toht for hungry Bangkokians at lunchtime who taught us what perfect balance actually tastes like—that crispy rice salad we now make at home for friends and family.
